Our emmer is so versatile that it is possible to create a lot of recipes: from starters to first courses, from side dishes to desserts.
Contrary to common belief, cooking pearled emmer is easy and quick since no soaking is required. The flour lends itself to many preparations: handmade pasta, bread, pizza, tarts and biscuits.
The sauces that enhance emmer pasta are vegetable-based or with not too strong ingredients and flavours, to fully appreciate the taste of the emmer.
