Unlike pearled emmer, whole emmer keeps the “film” wrapping the grain intact. This precious carrier of fibre and minerals would otherwise be lost with polishing.
Whole emmer also has the natural ability to imbibe the cooking water, satisfying without weighing heavily on the stomach.
Our whole emmer is good in all seasons: perfect to prepare soups and cold salads, does not overcook and has an intense flavour that goes well with delicate vegetables.
