The oldest because it is considered the first cereal “domesticated” by man about 10,000 years ago in the Fertile Crescent. It contains a “fragile” gluten whose protein part is largely destroyed during the digestion process.

You can use the organic whole farro as a base for hot or cold salads, to enrich your legume soups or
vegetables or you can prepare it as a risotto.
